Hooray for summer, its finally here! I love sunny summer days, spending time outdoors with my family. There is always so much to do; playing at the park, evening walks, hiking, BBQ’s, and visiting farmers markets. I wait all year for my favorite fruits to come into season, especially watermelon!
Each summer I always find myself reminiscing of my childhood growing up in Illinois. I can remember hot summer days sitting on the porch with my siblings eating ripened watermelon for what seemed like hours. Our faces and the creases of our necks would be sticky from the sweet juice running down our faces. Almost as fun as eating the watermelon was spitting the little black seeds. My brother, sister and I would collect as many seeds as our little mouths could safely hold and take turns spitting them as far as we could. It’s hard to believe that with all of our seed spitting contests that we didn’t have a watermelon patch overtaking our yard each year.
Watermelon brings my little family just as much joy now as it did when I was a child. Our son, Caleb, is a huge fan of watermelon. Watermelon is one of his favorite snacks and just like his mommy, he ends up with a sticky face, neck, and hands by the time he has finished a few pieces. Caleb is still too young to have seed spitting contests with his dad and me so until then we like to eat seedless watermelon. That way we can enjoy every single bite without worrying about avoiding the seeds.
Since our family is such a fan of watermelon, sometimes I find myself going a bit overboard at the local farmers market and buying more than we can possibly eat before it spoils. It is times like this that I love to experiment with new recipes. I recently created a Watermelon Lemon Coconut Drink that is refreshing and perfect for a hot summer day.
I used lemonade as a base for the drink but without the addition of water.
Watermelon is so incredibly juicy, and true to its name since it is about 92% water; so additional water isn’t needed. To puree the watermelon, I used my favorite 5-Speed KitchenAid® Blender.

Watermelon Lemon Coconut Drink
Makes 4-6 servings
6 cups, seedless watermelon
1/2 cup freshly squeezed lemon juice (about 4 lemons)
1/4 cup sugar
1/4 cup unsweetened lite coconut milk
1 tablespoon freshly chopped mint, or more to taste
Place freshly squeezed lemon juice and sugar into your KitchenAid® Blender.
Remove the outside rind of your seedless watermelon and cut it into 1-inch chunks.
Place the watermelon pieces into the blender. Puree until smooth. If there happens to be any black seeds in your watermelon, use a fork to remove as many as you can find at this point.
Add the coconut milk and blend until incorporated.
Chop the mint into small pieces and stir into the watermelon drink.
Remove the pitcher from the base and place into the refrigerator to chill for at least 30 minutes. Stir before serving.
