To make this deliciousness, start by cutting the ends off of the cucumbers and carrots to create flat surfaces for the KitchenAid® Spiralizer Attachment to work its magic. Place the carrots into a jar.

To pickle the carrots, boil the rice wine vinegar, water, honey, salt, and lime juice, and allow it to cool slightly. Pour this pickling liquid into the jar of carrots.

Close the lid and allow the carrots to sit in the refrigerator for at least two hours.

Finally, I have a Beet Noodle with Roasted Marcona Almonds and Goat Cheese Salad. Beets are one of my favorite superfoods because they’re so dense with nutrients.

Start by spiralizing the beets using the Spiralizer Attachment. Next, bring a salted pot of water to a boil. Blanch the beet noodles for 2-3 minutes. Drain the noodles and rinse with cold water to stop the cooking. Whisk together the olive oil, champagne vinegar, salt, and pepper. Toss the beet noodles in the dressing and then add the Marcona almonds and goat cheese crumbles.

Makes 2 servings

INGREDIENTS

For salad

1 large cucumber
2 carrots

For pickling liquid

1/3 cup rice wine vinegar
1/2 cup water
3 tablespoons honey
1/2 teaspoon sea salt
1 tablespoon lime juice

For dressing

1 tablespoon soy sauce
1 tablespoon honey
2 teaspoons sesame oil
1 tablespoon rice wine vinegar
Dash of red pepper chili flakes
1 tablespoon black sesame seeds

DIRECTIONS

Start by cutting the ends off of the cucumbers and carrots to create flat surfaces for the spiralizer to work its magic. Also cut the carrots and cucumbers in half, so they fit in the spiralizer attachment. 3 ounces Manchego cheese

1/4 cup fresh orange juice

1/2 tsp. honey
Kosher salt and freshly ground pepper, to taste

DIRECTIONS
