Spiralized Sweet Potato and Kale Salad

Have you ever tried spiralized vegetable noodles? Spiralizing vegetables is a fun and unique way to add flavor and nutrition to your meal. And spiralizing is made especially easy with the KitchenAid® Spiralizer Attachment. You can use the attachment to peel and spiralize zucchini, carrots, beets, and loads of other vegetables. I decided to spiralize sweet potato for this fresh and flavorful Spiralized Sweet Potato and Kale Salad with Maple Balsamic Dressing.

The Spiralizer has four quick-change spiralizing and slicing blades, as well as a peeling blade, making it a super versatile tool for this recipe. In only a few minutes, you can have fun noodles or slices of fresh fruit and vegetables. Attach the Spiralizer to your KitchenAid® Artisan® 5-Quart Tilt-Head Stand Mixer, and you’ll be able to peel and spiralize the sweet potato at the same time.

Attach the Spiralizing Blade of your choice to the Spiralizer. You can use the medium or fine spiralizing blade, based on your noodle thickness preference. I prefer to use the medium blade to make larger noodles, but the choice is up to you! Then, slide the Peeling Arm into place. Finally, turn the Stand Mixer to Speed 2 to simultaneously peel and spiralize your sweet potato.

Next, heat the olive oil in your KitchenAid® 5-Ply Copper Core 12” Nonstick Skillet set over medium heat. Add the sweet potato noodles and sauté until softened, about 6 to 8 minutes. Season with salt and pepper. Set aside to cool. Meanwhile, mix together your maple balsamic dressing by whisking the olive oil, balsamic vinegar, maple syrup, Dijon mustard, and garlic in a small bowl. Season with salt and pepper, to taste.

To assemble the salad, layer the kale in a bowl. Top with cooked sweet potato, fuji apple, candied walnuts, and goat cheese. Serve with maple balsamic dressing and enjoy!

Spiralized Sweet Potato and Kale Salad

Makes 4 servings

INGREDIENTS

For the salad

1 medium sweet potato, peeled
1 tablespoon olive oil
Salt and pepper
3 heaping cups coarsely chopped kale
1 small Fuji apple, chopped into small pieces
1/4 cup candied walnuts
1/3 cup goat cheese

For the dressing

1/4 cup extra virgin olive oil
2 tablespoons balsamic vinegar
1 tablespoon pure maple syrup
2 teaspoons Dijon mustard
1 garlic clove, minced

DIRECTIONS

To make the salad, secure yourKitchenAid® Spiralizer Attachment to the hub of your Artisan® 5-Quart Tilt-Head Stand Mixer. Attach the Spiralizing Blade of your choice (I used the Medium Spiralizing Blade) and slide the Peeling Arm into place. Turn the Stand Mixer to Speed 2 to simultaneously peel and spiralize your sweet potato.
