
Simple Spinach Salad with Dijon Lemon Dressing
Makes 4 servings
INGREDIENTS
For the dressing
2/3 cup extra-virgin olive oil
Pinch finely grated lemon zest
1/3 cup fresh lemon juice
2 tablespoons finely chopped chives
1 1/2 tablespoons Dijon mustard
1 clove garlic, peeled
1/2 teaspoon sea salt
1/8 teaspoon freshly ground black pepper
For the salad
6 cups firmly packed baby spinach
3 Roma tomatoes, sliced lengthways and cut into 8 wedges
1 English cucumber, cubed
1 medium avocado, peeled, pitted, and cubed or sliced
2 1/8″ slices red onion, broken into thin pieces
1/2 cup blanched slivered almonds
1/4 cup shelled hemp seeds
Sea salt and freshly ground pepper, to taste
DIRECTIONS
For the dressing
Place all your dressing ingredients into the blender jar of the KitchenAid® Pro Line® Series Blender. Secure the lid and blend on Speed 8 for about 20 seconds until well combined. Set aside.
For the salad
In a large bowl, add your salad ingredients. Pour half of the dressing over the salad, toss gently to combine, and serve immediately. Allow your friends and family to add more of the remaining dressing as desired.
