As the popularity of spiralizing grows, so do the number of vegetables I’ve tested out as noodles. At first I was hooked on zoodles, turning every zucchini I saw into long strands of veggie “pasta.”
Inspired by fresh summer produce, I began to experiment with other vegetables that were sturdy, yet mild in flavor, making a good base for any sauces I decided to add.
So I turned to my one of my favorite vegetables – golden beets. And they turned out to be the perfect veggie noodle! Their round, wide shape fits perfectly on the KitchenAid® Spiralizer, and they sauté quickly with a just a bit of olive oil and salt. With an al dente bite and satisfying firmness, the bright yellow noodles lend themselves well to this almond mint sauce. And because beets have less water content, the sauce sticks to them better!
Not only is this a delicious, grain-free meal, but it’s also packed with nutrition. Golden or yellow beets are heart healthy, excellent kidney and body cleansers, high in powerful antioxidants, and great for lowering blood pressure. The sauce is a great source of healthy fats because of the almonds, and it’s vegan. Let’s get started!
Attach your Spiralizer to the hub of your KitchenAid® Stand Mixer. I absolutely love all the blade options that come with this Spiralizer, making this tool so versatile. For this recipe, I used the fine spiralizing blade.
Fit your golden beet onto the Spiralizer. Set the Stand Mixer to speed 1, then bring it to speed 3. This will create noodles in an instant, without really any effort. The Spiralizer does all the work for you! When you have finished, set the noodles aside.
Making the sauce for these noodles is incredibly easy. Start by soaking 1/2 cup of raw almonds in 1 cup of filtered water for 3 hours. Then, drain and rinse your almonds. Add them to a blender, along with a little bit of filtered water, chopped garlic, olive oil, chopped mint leaves, lemon juice, and salt.
Blend the ingredients together, adding more salt as needed. And seriously, that’s it! In a few minutes, you have a refreshing sauce to toss with your golden beet noodles!
Now that you have your noodles and sauce ready, it’s time to get cooking! Heat your KitchenAid® 8″ Skillet to medium heat. Add olive oil to and sauté the noodles with a bit of salt, until just cooked through.
Add the almond mint sauce to the warm noodles and top with toasted almonds and fresh basil. If you want to add protein to this dish, grilled chicken would be a great option. I cannot wait for you to try this delicious and healthy dish for yourself. Enjoy!

Spiralized Golden Beets with Vegan Almond Mint Sauce
Makes 2-3 servings
For the noodles
2 medium sized golden beets, peeled
1 tablespoon olive oil
1/4 teaspoon salt
Chopped almonds and fresh basil, for garnish
For the sauce
1/2 cup raw, blanched slivered almonds soaked for 3 hours in 1 cup of filtered water
Additional 1/2 cup filtered water
2 cloves garlic, chopped
1 tablespoon olive oil
10-12 mint leaves, roughly chopped
3 tablespoons fresh lemon juice
1/4 teaspoon salt
Attach your KitchenAid® Spiralizer (using the fine spiralizing blade) to the power hub of your Stand Mixer. Fit your golden beet onto the Spiralizer. Set the Stand Mixer to speed 1, then increase to speed 3. Set the finished noodles aside.
To make the sauce, drain and rinse almonds. Add to a blender, along with an additional 1/2 cup water and the rest of the sauce ingredients. Blend for 40 seconds, on high, until completely smooth. Stir down sides and reblend for 15 more seconds. Taste and adjust salt as needed.
Heat your KitchenAid® 8″ Skillet to medium heat. Add olive oil and sauté the noodles with salt, until just cooked through, about 6 minutes.
Plate the noodles and add a liberal amount of sauce. Finish with fresh basil and toasted almonds.
