The July 4th-inspired fun starts with the red layer of the popsicles, which is made by blending strawberries with lime juice and honey. There’s no mashing or mess, as the KitchenAid® Pro Line® Series Cordless Hand Blender transforms the individual berries into a perfect purée in less than a minute.
Pour the strawberry purée into the popsicle molds until they are approximately one-third full and then place the molds in the freezer. Remember that the layers will expand slightly when frozen so it’s important to leave a little bit of extra space after the final layer is added.
Next up is the white layer of the popsicles, which is made by stirring together yogurt, coconut milk and honey. Feel free to taste the mixture and adjust the sweetness as desired by adding more honey or more coconut milk.
Once the strawberry layer is frozen solid, pour the coconut-yogurt mixture on top, filling each mold an additional one-third full, and then insert the popsicle sticks and return the molds to the freezer.
While the white layer is firming up, prepare the blue layer of the popsicles by using the hand blender to purée together the blueberries, pomegranate juice and lime zest.
Once the coconut-yogurt layer has frozen solid, pour the blueberry mixture on top and around the popsicle sticks, filling the final one-third of each mold. Return the molds to the freezer until the popsicles are frozen solid.
When you’re ready to serve the popsicles, simply run the exteriors of the molds under warm water to loosen them slightly and then pull them out using the popsicle sticks. And it’s as simple as that! Now you can skip the store-bought popsicles and serve up a healthier homemade version of summer’s new go-to sweet on-a-stick.
Red, White and Blue Popsicles
Makes 8 (3-ounce) popsicles
1 1/4 cups sliced strawberries
2 tablespoons fresh lime juice
5 tablespoons honey, divided
1/2 cup plain full-fat yogurt
1/2 cup unsweetened coconut milk
1 1/2 cups blueberries
1/4 cup pomegranate juice
1 teaspoon lime zest
Combine the sliced strawberries, lime juice and 2 tablespoons honey in a deep bowl or plastic pitcher. Attach the slicing blade to the KitchenAid® Pro Line® Series Cordless Hand Blender and blend until puréed. Divide the mixture evenly between the popsicle molds and freeze until firm, about 30 minutes. Clean the bowl and hand blender and set aside.
In a medium bowl, whisk together the yogurt, coconut milk and remaining 3 tablespoons honey until smooth. Divide the yogurt mixture evenly between the popsicle molds, pouring it atop the frozen strawberry layer. Insert popsicle sticks into the center of each mold and freeze until firm, about 30 minutes.
Combine the blueberries, pomegranate juice and lime zest in the deep bowl or plastic pitcher. Using the hand blender, blend the mixture until puréed. Divide the blueberry mixture evenly between the popsicle molds, pouring it atop the frozen yogurt layer, and freeze until firm, about 30 minutes.
When ready to serve, briefly run the popsicle molds under warm water then gently pull the popsicles from the molds and serve.
