The holidays are upon us; the lights are twinkling in houses throughout the neighborhood, the days are shorter and the radio is teasing us with jingling tunes as we drive.

It’s time for families to start arriving on our doorstep, packages in hand, aching to pinch the cheeks of our children. The kitchen will be bustling, and the ladies will gather around the stove while the men hunker down for hours of football…or vice versa, here in my house.

And while it is the holiday season, it is also the season for eating.

And, while many of us will spend a huge amount of time in the kitchen preparing meals for our families, there’s no reason we have to. The new KitchenAid® Multi-Cooker is an amazing appliance that does the majority of the cooking work, leaving you free to focus on other kitchen tasks. Its 4-quart design is ideal for smaller meals and stews, but it is also big enough for something as robust and indulgent as this Pear and Persimmon Beef Brisket.

The dish may sound complicated, but fear not, the most difficult part of this recipe is finding a butcher with brisket. So many stores today do not carry anything but corned beef brisket, so do keep an eye out – you do not want corned beef. A nice 2-3 pound beef brisket is what you need to get this delicious dish under way. Also watch for nicely ripe Fuyu persimmons, as they make for a subtle yet sweet addition to the pears that dress up this holiday dish.

To begin the recipe, trim and score the brisket. A three pound brisket is an ideal size for the KitchenAid® Multi-Cooker and for a small family. Reserve the fat for another use, such as to season green beans or for another savory side dish; the fat will keep for several days wrapped in plastic in the refrigerator. Once your brisket is trimmed and scored, season it generously with kosher salt and cracked fresh pepper, and place it in a deep skillet or cast iron pan with extra virgin olive oil to sear on both sides.

Once seared, remove the meat from the skillet and place it into the Multi-Cooker.

Place the onions and celery into the same pan with a dash of olive oil and sauté for about five minutes, until aromatic. Add the garlic and cook an additional minute. At this point, add the liquids, and bring them to a simmer before adding to the Multi-Cooker, along with three bay leaves.

Set the Multi-Cooker to Slow Cook High and cook for 4-6 hours, until the meat is tender. Halfway through cooking, add the persimmons and pears. Serve brisket once cooked through to desired doneness, and cut against the grain. Top with pear and persimmon pieces.

Makes 4-6 servings

INGREDIENTS

2 1/2 to 3 pound beef brisket
3 tablespoons extra virgin olive oil, divided
Kosher salt & pepper, as desired
1 large sweet onion, chopped
4 celery stalks, diced
3 cloves garlic, minced
2 cups beef stock
1/4 cup red wine
1 tablespoon Worcestershire sauce
3 bay leaves
4 ripe Fuyu persimmons, cut into pieces
3 ripe pears, cut into pieces

DIRECTIONS

Trim and score the brisket. Once your brisket is trimmed and scored, season it generously with kosher salt and cracked fresh pepper, and place it in a deep skillet or cast iron pan with 2 tablespoons extra virgin olive oil to sear on both sides.

Once seared, remove the meat from the skillet and place it into the KitchenAid® Multi-Cooker.
