All Natural Caramel Corn Appetizers

Let’s celebrate the final days of summer with an end-of-summer movie night. And if you can do it outdoors, even better!

For your end-of-summer movie night, we have just the thing: caramel corn popcorn balls. These are perfect for the kiddos too. They are all natural. They are made with maple syrup and coconut sugar instead of corn syrup and brown sugar. Plus they are dairy free. Can we get a high five for that?

The best part is they are super easy to make. To start, pop 1 1/2 bags of salt and butter-free popcorn. Place the pop corn in a big bowl by hand being careful to separate out any un-popped kernels.

Next add the coconut sugar, maple syrup, brown rice syrup, butter, and salt to a large KitchenAid® 6Qt Cast Iron Cookware. Cook on medium for about 4-5 minutes until the mixture foams and thickens slightly. Stir often so the caramel doesn’t burn. Add the vanilla carefully as the mixture will splatter slightly.

Add the popcorn to the Cast Iron Casserole. Fold the popcorn into the caramel using a spatula. Keep folding and stirring until the popcorn is coated evenly. Turn the burner off.

Form the caramel corn into small balls. To make pretty appetizers, cut lollipop sticks in half and stick them into the balls. Tie a ribbon around each stick.

It would also be super fun to do a popcorn bar with toppings for your popcorn balls: chocolate, pretzels, sprinkles, etc.

Makes 20 servings

INGREDIENTS

1 1/2 bags plain microwave popcorn
1/2 cup brown rice syrup
