Homemade Gyro Dog Recipe

Everyone loves a good hot dog. Loaded with mustard, ketchup and relish, it is a summertime staple. But every once in a while it is good to shake things up a bit and that is exactly what these gyro dogs do. They bring together everyone’s favorite thing to throw on the grill and everyone’s favorite Mediterranean street food.

Our family loves sausage and gyros and for this challenge the two come together to make one flavorful hot dog filled with loads of garlic, cumin, oregano, salt and pepper.  To get the full gyro experience, these dogs are also topped with tzatziki, sliced onions and sliced tomatoes. Our whole family devoured them. Even my toddler!

I used to be really intimated by the idea of making my own sausage, until I got my KitchenAid® Stand Mixer, Food Grinder and Sausage Stuffer Kit. The three together make making sausage easy peasy.

One of the most important things to remember when making your own sausage is to keep everything cold. So make sure you plan ahead to allow time for that. For this recipe, the sausage mixture needs to chill in the refrigerator for 2 hours and then the sausage mixture and all of the attachment equipment needs to chill in the freezer for an additional 30 minutes before you start.

The key ingredient to making your own sausage is a hog casing. It is the casing that you feed onto the Sausage Stuffer and stuff the sausage into. You can buy these at your local butcher store or butcher counter. For this recipe, I bought one hog casing, used half of it and froze the other half to use the next time I make sausage.

The best way to get the hog casing onto the KitchenAid® Sausage Stuffer Kit is to grease the Sausage Stuffer with a little shortening and then gently thread the casing on. You will want to leave 5 inches hanging off the end. This will allow you to work out any air and to tie off the sausage.

Once the casing is on, simply put the seasoned meat inside the KitchenAid® Food Grinder and turn the KitchenAid® Stand Mixer to 4.

As the casing is filled, the casing will pull off of the KitchenAid® Sausage Stuffer Kit. I find it helpful to hold the the sausage with one hand as it is being filled so that it doesn’t pull too much of the casing off at once.

Be sure to leave 5 inches of hog casing at the end so you can tie off both ends of the sausage.

Once finished you will have one long sausage.

You will want to use a toothpick to poke out any air pockets you might find. This will help the casing cling to the sausage.

To form the links use both of your hands to measure out a sausage link and then twist, in opposite directions, to form the links.

See! I told you it was easy! Now all that’s left is to grill it up, slather on the tzatziki, onions, tomatoes and voila! You’ve got a Mediterranean twist on the classic hot dog.

Homemade Gyro Dog

Makes 4-6 servings

INGREDIENTS

For the sausage

2 pounds ground chicken thigh meat
5 cloves minced garlic
1 1/2 teaspoon dried oregano
1 teaspoon ground cumin
1 teaspoon onion powder
2 teaspoons kosher salt
1/2 teaspoon black pepper
Shortening for greasing the Sausage Stuffer Kit
5-6 feet hog casing

For the tzatziki sauce

3/4 cup greek yogurt
1/4 cup minced cucumber
1 tablespoon chopped fresh dill
2 cloves minced garlic
Salt and pepper

For the gyro dog

Hot dog buns
2 tomatoes sliced
1/2 medium yellow onion, sliced thin

DIRECTIONS

For the sausage

Combine chicken meat, garlic, dried oregano, ground cumin, onion powder, salt and pepper together in a bowl. Use your hands to mix well. Cover and refrigerate for at least 2 hours.

Place meat mixture, KitchenAid® Sausage Stuffer Kit and Food Grinder Attachments in the freezer 30 minutes prior to making the sausage.

At the same time, place the hog casing in a bowl of cool water and let soak for 30 minutes. Then run warm water through the casing, check for holes.

When you are ready to make the sausage, attach the KitchenAid® Food Grinder and Sausage Stuffer Kit to your Stand Mixer.

Use about a tablespoon of shortening and grease the KitchenAid® Sausage Stuffer Kit. Carefully, and gently slip the casing onto the sausage stuffer. Leave about 5 inches at the end so that you can tie the sausage once stuffed.

Remove the meat from the freezer. Turn your KitchenAid® Stand Mixer to 4. Begin stuffing the meat into the top of the Food Grinder Attachment.As the meat starts to come out into the casing, use one hand to guide the sausage into the casing and the other hand to continue to add meat to the attachment. You’ll make one long sausage link. Leave 5 inches of hog casing at the end.

Tie off both ends of the sausage.

To make the links, use both of your hands to measure out a sausage link and then twist, in opposite directions, to form the links.

Use a wooden skewer or toothpick to puncture any air pockets you might find. This will allow the casing to cling to the sausage.

Place the sausage in the refrigerator for a few hours or overnight to dry out a bit.

For the tzatziki sauce

Combine the greek yogurt, cucumber, dill, garlic, salt and pepper together in a bowl.

Cover and refrigerate for at least 1 hour.

For the gyro dog

Heat a grill to medium-high heat. Cook sausages until cooked through.

To assemble a gyro dog, place a sausage in the hot dog bun and top it with tzatziki sauce, sliced tomatoes and onions. Serve.
