Step aside, cranberry sauce. One of the holiday season’s star fruits is making the move from the Thanksgiving table to the breakfast buffet as it teams up with tangy pomegranate juice, sliced bananas and flaxseed meal for the ultimate breakfast-on-the-go: Cranberry Pomegranate Smoothies.
This quick and easy recipe stars frozen cranberries, which means cranberry smoothies can be made year-round. You can also opt for fresh cranberries when they are in season and simply freeze them in airtight containers prior to blending your smoothie.
Begin by adding all of the ingredients into the KitchenAid® 5-Speed Diamond Blender, starting with the liquid. When making smoothies, it’s important to have a liquid component (such as juice or water) to help blend the solids into a creamy purée.
Flaxseed meal, my go-to ingredient for homemade granola bars, ups the health factor by lending Omega-3 essential fatty acids and plenty of fiber. And while cranberries are characteristically tart in taste, I’ve opted to sweeten the smoothie with a squeeze of agave nectar or honey.
After a quick pulse to incorporate the ingredients, continue blending until the smoothie reaches your desired consistency. You can thin the smoothie with additional pomegranate juice, or thicken it by adding additional frozen cranberries or ice cubes.
Once blended, taste the smoothie to determine its sweetness. If it’s a tad too tart for your taste buds, simply add a squeeze more of honey or agave nectar and blend until combined. Pour the smoothie into glasses and garnish with a sprig of fresh mint and a toothpick of skewered cranberries.
And that’s all it takes to transform a signature Thanksgiving side dish into a healthy, refreshing smoothie loaded with heart-healthy benefits and antioxidants.
Cranberry Pomegranate Smoothies
Makes 2 servings
1/2 cup pomegranate juice
1 cup frozen cranberries
1/3 cup plain yogurt
1 tablespoon flaxseed meal (optional)
1 tablespoon honey or agave nectar
Fresh mint, for garnishing
Combine all ingredients in the KitchenAid® 5-Speed Diamond Blender in the order in which they are listed. Blend the ingredients until well combined. Taste and sweeten with additional honey as desired. Pour into glasses, garnish with mint and serve.
