Growing up, one of my favorite things to do was hang out in the kitchen with my mom. I’d help her make dinner or snacks. By the time I was 9, I was even making snacks for the neighbors. It was really one of the favorite parts of my childhood, so when I had kids I couldn’t wait to get them in the kitchen to make some wonderful memories for them.
My littlest is 7 months so he’s not quite ready to help out but my 3 year old son loves to help make dinner. He started out by saying “mommy I want to cook!“ so he would take out a frying pan and put in different spices and sprinkles and stir them around. Slowly, I began having him actually help make dinner and it’s now one of his favorite things to do.
Getting kids in the kitchen is easy, fun, helps them to learn different skills and gives them a sense of accomplishment when they see that the food that they made is on your dinner table. I know my son feels so proud when we eat something that he helped us make.
I usually keep his part simple but fun enough to keep him interested. This means stirring, adding ingredients, sprinkling spices and pushing buttons on appliances.
When we set out to make these Shredded Chicken Sandwiches with Honey Dijon Slaw, I knew what I was going to have him do: turn on and shred the cabbage using the new KitchenAid® Food Processor Attachment with the ExactSlice™ System.
I put the cabbage in the processor and allowed him to use the pusher to push it through. He loved it. He pushed it through and then would watch it come out the other side all shredded and ready for slaw.
After pushing the cabbage through he tossed it all together.
Then he helped me make the dressing.
For the chicken, we used already cooked chicken breasts, which worked really well to have him shred as well.
Next, we quickly cooked the chicken in just a little bit of olive oil, lemon and pepper and then we were ready to eat.
As soon as we sat down, he was so proud to tell his daddy that he helped make our sandwiches and, while the sandwiches are quite delicious, the look of pride on his face was the best part of the meal.
Shredded Chicken Sandwiches with Honey Dijon Slaw
Makes 4 servings
1/4 cup mayonnaise
2 teaspoons honey
2 teaspoons Dijon mustard
1/4 teaspoon garlic powder
1/4 wedge red cabbage (about 1 1/2 cups shredded)
1/4 wedge green cabbage (about 1 1/2 cups shredded)
2 pre-cooked chicken breasts
2 tablespoons olive oil
1 tablespoon lemon juice
1/4 teaspoon freshly ground black pepper
4 brioche buns
Whisk together mayonnaise, honey, Dijon mustard and garlic powder.
Turn the ExactSlice™ System to thin. Place a bowl under the food processor to catch the cabbage. Place cabbage in the feeder and push the cabbage through to slice.
Toss the cabbage with the mayonnaise. Cover and refrigerate while you prepare the sandwiches. Using the slicing blade again, slice the chicken.
Heat oil in a skillet over medium heat. Cook chicken just until warmed through, pour lemon juice over the top and sprinkle with pepper. Mix well.
To assemble the sandwiches, spoon 1/2 cup of chicken onto the bottom bun, spoon slaw over chicken and top with top half of bun. Serve.
