For me, sake was something of an acquired taste. I tried it once, served hot at a sushi restaurant, and swore to myself that I’d never order it again.
A few years later, I stopped into my favorite wine shop in Portland and found that the owner was hosting a sake-tasting night. After a strong bit of convincing, I agreed to go. The moment I tasted chilled sake, I was hooked!
To make these cocktails, start by juicing ripe pears and fresh ginger.
Attach the KitchenAid® Juicer and Sauce Attachment (slow juicer) onto your Professional 600 Series 6 Quart Bowl-Lift Stand Mixer. Insert the low pulp screen and be sure that the pulp chute is in the “open” position. I used this particular screen because a low pulp juice mixes better with the sake and sparkling water in the final cocktail. Don’t forget to place the juice and pulp containers that come with your Juicer and Sauce Attachment underneath the spouts to be prepared to catch all of the delicious juice that comes out!
Plug in your Stand Mixer and turn it on to a speed of 10. Use the food pusher to feed the ginger root and fresh pears through the juicer. Run the mixer for a minute or two after you’ve processed the produce to make sure you capture any spare drops. I love my Juicer and Sauce Attachment because it saves room on my countertop and makes it easy to enjoy freshly squeezed juice every day of the week.
Now that the juice is ready, you can make your cocktails. To make the Saketini, place an ounce and a half of the pear-ginger juice in the bottom of a serving glass.
Top with two ounces of chilled sake and an ounce and a half of chilled sparkling water. Give the drink a little stir, then serve promptly.
These drinks are perfect for lazy days on the patio or to serve with a big bowl of spicy noodles. And they’re a great way to introduce your friends to the world of sake!
