The holidays may be over, but we’re not done celebrating yet. We’re gearing up to ring in the New Year and that means we need party food. These chocolate truffles are the perfect little treats for your family and friends to enjoy as they count down to 2017.
When I say these chocolate truffles are easy, I mean easy. We make these chocolate truffles in our KitchenAid® Built-In Microwave Oven and there are only three ingredients involved: chocolate, heavy cream, and vanilla extract. We do roll the truffles in toppings after the chocolate chills, but you can keep the toppings super simple. The rolling is the fun part; you can get the whole family to help—our boys love making truffles!
First, combine chopped chocolate and heavy cream in a microwave safe bowl.
Place the bowl in the Microwave. This 1000 watt Microwave is powerful enough to cook through all of my foods quickly. Because of its full-family size cooking capacity, I can easily heat up large dishes!
Heat the chocolate and cream together and stir.
Remove the bowl from the Microwave and stir in the vanilla extract.
Pour the chocolate mixture into a small pan. I use a ceramic casserole dish; it’s the perfect size for the chocolate mixture.
Chill the chocolate mixture in the KitchenAid® French Door Refrigerator for 2-3 hours or until firm. Scoop out small spoonfuls of the chocolate mixture and roll into balls.
Roll the truffles into your desired toppings. I like to use cocoa powder, crushed candy canes, and chopped nuts.
Place the truffles on a baking sheet. You can line it with parchment paper or wax paper if you would like. When finished making the truffles, store them in the Refrigerator for up to two weeks.

Makes 6-8 servings
8 ounces good quality chocolate, chopped
1/2 cup heavy cream
1/2 teaspoon pure vanilla extract
Candy canes, crushed
Place the chopped chocolate and heavy cream in a medium microwave safe bowl. Heat for 30 seconds in the KitchenAid® Built In Microwave Oven and stir. Heat for another 30 seconds and remove from the microwave. Stir until chocolate is silky and smooth. If there are still lumps, heat for an additional 15 seconds and stir again. Stir in the vanilla extract.
Pour the chocolate mixture into a small casserole dish. Chill in the KitchenAid® French Door Refrigerator for 2-3 hours, until chocolate is firm.
Remove from the refrigerator and let soften for 15-20 minutes. Using a small scoop, scoop out spoonfuls of the chocolate mixture and roll into balls.
Place the cocoa powder, crushed candy canes, and chopped nuts in small bowls. Roll the truffles into desired toppings and place on a baking sheet. You can line it with parchment paper or wax paper if you would like.
When you’re finished rolling the truffles, place in an airtight container and store in the refrigerator for up to two weeks.
