Chicken Fajitas Recipe

Fajitas are a classic dish that everyone loves. They are easy, flavorful and delicious. Best of all, you can have dinner ready in almost no time. I keep all of the ingredients on hand so chicken fajitas are usually my go-to weeknight meal.

For this recipe, I use my KitchenAid® 6.0Qt Cast Iron Cookware. The cookware is perfect for fajitas because you can grill the vegetables and chicken right on the lid that doubles as a grill pan. Or you can use the pot to cook the vegetables and use the lid to grill the chicken. I like cooking the vegetables at the same time as the chicken so I use both pieces of the cookware for this recipe. The cookware is versatile and the dark-colored interior resists staining and doesn’t require seasoning. It is also perfect for grilling at high temperatures.

To make the fajitas, whisk together the diced onion, canola oil, chili powder, cumin, garlic, salt and lime juice. Add the chicken, mix well, cover, and let it marinate in the refrigerator for at least one hour.

After the chicken is done marinating, heat the grill pan (top half of the KitchenAid® 6.0Qt Cast Iron Cookware) until it’s very hot. Place the chicken on the grill pan and cook for 3 to 4 minutes. Carefully lift the chicken with tongs and flip the pieces. Cook for another 6 to 8 minutes on the other side, or until the chicken is cooked through and reaches an internal temperature of 165 degrees Fahrenheit on an instant-read thermometer.

While the chicken is cooking, heat the olive oil in the pot (bottom part of the Cast Iron Cookware.) Add the sliced peppers, onion, chili powder and salt. Sauté the peppers and onions for 4 to 5 minutes, or until they are golden and have softened slightly. Remove the pan from the heat, slice chicken into strips and then add the chicken to the peppers. Create a complete meal by serving the grilled chicken and vegetables with warm tortillas, cilantro, salsa, sour cream and guacamole, as desired.

Chicken Fajitas

Makes 3-4 servings

INGREDIENTS

For the chicken

1 jalapeño, seeds removed and diced into small pieces
2 tablespoons canola oil
2 teaspoons chili powder
1 teaspoon ground cumin
1 clove garlic, chopped
1/2 teaspoon kosher salt
Juice of 1 large lime
1 pound boneless, skinless chicken breasts

For the onions and peppers

2 teaspoons extra virgin olive oil
1 large red bell pepper, thinly sliced
1 large green bell pepper, thinly sliced
1 large red onion, thinly sliced
1 teaspoon chili powder
1/4 teaspoon kosher salt
Tortillas, fresh cilantro, salsa, sour cream and guacamole, for serving

DIRECTIONS

In a large bowl, whisk together the diced jalapeño, canola oil, chili powder, cumin, garlic, salt and lime juice. Add the chicken, mix well, cover and let it marinate in the refrigerator for at least 1 hour.

Heat the grill pan lid from the KitchenAid® 6.0Qt Cast Iron Cookware over high heat until it is very hot. Place the chicken on the grill pan and cook for 3 to 4 minutes. Carefully lift the chicken with tongs and turn them.
