Butter Cake with Whipped Cream & Seasonal Berries

This cake had me at “butter.” I mean how can you go wrong with butter and cake in perfect harmony? The answer is you can’t. Top it with some whipped cream and seasonal berries, and you have yourself the perfect summer dessert.

Grab your KitchenAid® Stand Mixer, and let’s get started.

Preheat the oven to 325 degrees F. Grease a KitchenAid® Nonstick Round Cake Pan with cooking spray or butter. Secure the flat beater attachment to your Stand Mixer. Add the ingredients and mix on low for 30 seconds, and then mix on medium for 3 minutes until there are no lumps.

Using a spatula, scoop out the batter into the greased pan. Bake in a your Convection Digital Countertop Oven for about 65 minutes or until a toothpick inserted into the center comes out clean. Allow cake to cool slightly before inverting it onto a cake stand.

To make the glaze add all of the ingredients to a KitchenAid® Tri-Ply Copper 3.5-Quart Sauté Pan.

Cook on medium-low until the sugar is melted and before it comes to a boil. Using a knife, poke holes in the cake. Pour the glaze over the cake being careful that the glaze doesn’t run over the edge of the cake stand.

To make the whipped cream, secure the whisk attachment to a Stand Mixer. Add ingredients to the Stand Mixer. Mix on medium or high until stiff peaks form.

Using a spatula, spread whipped cream over the top of the cake. Top with berries of your choosing. Serve immediately.

If you aren’t much of a whipped cream person, we can’t be friends. But also this cake is marvelous on its own, no whip needed. This cake is reason number 375 why I love berry season.

Butter Cake with Butter Glaze, Whipped Cream, + Berries

Makes one 9-inch cake

INGREDIENTS

For cake

1 cup butter, room temperature
2 cups granulated sugar
4 eggs
1 tablespoon vanilla
1 cup buttermilk
3 cups all purpose flour
1 teaspoon salt
1 teaspoon baking powder
1/2 teaspoon baking soda

For butter glaze

1/3 cup butter
3/4 cup granulated sugar
2 tablespoons water
2 teaspoons vanilla

For whipped cream

Half pint whipping cream
1 cup sugar

DIRECTIONS

For cake
