Buffalo Cauliflower Bites with Sriracha-Lime Sauce

Sports are a big deal around my house, but it’s often the food that takes center stage over the games. Nothing says game day like veggies right!? Well, that is until you make my crispy buffalo style cauliflower bites. They are oven baked, tossed in a sriracha-lime hot sauce, and served with a blue cheese greek yogurt sauce. Gone are the days of only being able to graze off the veggie platter on game day. If you close your eyes and pop these in your mouth, you would think you’re eating buffalo chicken wings, but alas, you’ve crossed over to the veggie side and it’s too late to go back.

To start, you will need to break down one head of white cauliflower into large bite size pieces. Most chicken wings are deep fried, but these cauliflower bites are oven baked, so let’s get going on the batter. Combine one cup of rice flour (gluten-free!), with spices like cumin, smoked paprika, coriander, and salt and pepper. It’s so important to season the batter because the only way we are going to create layers of flavor is by seasoning at every step of the cooking process.

Thoroughly coat the cauliflower pieces in the batter, shake off any excess, and move them onto a KitchenAid® Professional-Grade Nonstick Jelly Roll Pan. These pans conduct heat so evenly and they’re nonstick, making them the perfect tool for this job. Bake the bites in a 450 degree F oven for 15-20 minutes until a nice crust forms.

Meanwhile, you can make the sriracha-lime sauce in a 1.5-Quart Saucepan from the KitchenAid® Aluminum Nonstick 10-Piece Set. This pot is so versatile, and because of its manageable size, I use it for making oatmeal, quinoa and sauces. Just combine 1/2 cup of Sriracha with butter, lime zest and juice, and honey. The key is tasting this sauce and making sure you have the right balance of heat, acid, and sweet. Once the butter has melted, take the sauce off the heat and set aside.

Once the crust has formed on the cauliflower bites, place them in a large bowl and carefully toss them with enough sriracha-lime sauce to coat evenly. Place them back on the Jelly Roll Pan and bake for another 25-30 minutes until crispy.

Meanwhile, you can make the blue cheese Greek yogurt sauce by combining the blue cheese and Greek Yogurt in a bowl along with a little mayonnaise, lemon zest and juice, orange zest and juice, a little milk, chopped chives, and some pepper. If you haven’t noticed yet, I’m obsessed with zest; it actually has more flavor than the juice of the citrus.

Once the cauliflower bites are ready, serve them on a large platter with a garnish of chives, some extra Sriracha-lime sauce for those who like it spicy, and the blue cheese sauce. Be ready to be named the MVP of your party and hoisted on the shoulders of your friends.

Buffalo Cauliflower Bites with Sriracha-Lime Sauce

Makes 3 servings

INGREDIENTS

For cauliflower

1 cup rice flour
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon ground cumin
1 teaspoon smoked paprika
1/2 teaspoon ground coriander
1/2 teaspoon kosher salt
1/4 teaspoon fresh cracked pepper
1 cup water
1 head of cauliflower, cut into bite size pieces

For Sriracha sauce

3 tablespoons unsalted butter
1/2 cup plus 1 tablespoon Sriracha, or any hot sauce you like
Zest of one lime
Juice of half a lime
3 tablespoons honey
1 tablespoon fresh orange juice
1/2 teaspoon kosher salt

For Greek yogurt blue cheese sauce

1/2 cup greek yogurt
2 tablespoons mayonnaise
2 tablespoons chives, chopped
3-4 tablespoons crumbled blue cheese
1-2 tablespoons milk
1 tablespoon of orange zest and 1 tablespoon juice
1 tablespoon lemon zest and 1 tablespoon juice
1/2 teaspoon kosher salt
1/4 teaspoon fresh cracked pepper

DIRECTIONS

Pre-heat oven to 450 degrees F. Combine the first 8 ingredients in a bowl and stir to combine. Add water to the bowl and mix batter until it’s well incorporated and thin. Dump the cauliflower into the batter and coat evenly. Shake off excess batter and place cauliflower on a KitchenAid® Professional-Grade Nonstick Jelly Roll Pan. Bake for 15-20 minutes, until the crust has become solid.

Meanwhile, make the Sriracha sauce by putting all the ingredients in a 1.5-Quart Saucepan from the KitchenAid® Aluminum Nonstick 10-Piece Set over medium heat. Cook until the butter has melted, check to make sure the mixture is well-seasoned, and remove from the heat. You may need to add a little more lime juice or honey.

Take the cauliflower out of the oven after a crust has formed, and gently place in a large bowl. Pour over half of the sriracha sauce and toss to combine, adding more sauce if necessary. Place back in the pan, and bake for another 15-25 minutes until crispy.

For the blue cheese sauce, add all the ingredients to a bowl and mix well. Taste and adjust seasoning if necessary.
