One of my goals this year is to make brunch a more memorable experience by reinventing existing brunch recipes and creating exciting new ones. From new twists on mimosas to hearty muffins, this will be the year we make brunch a celebration!

Let’s start by reinventing the classic mimosa with freshly pressed juices. I think we can all agree that brunch is never complete without mimosas. With just two ingredients, orange juice and champagne, this classic drink goes great with just about any brunch recipe. But why settle for store-bought orange juice?

To make different flavored mimosas, simply swap out different fruit juices to achieve the combination you like. I love freshly squeezed juices because of their natural sweetness and fresh flavor. My KitchenAid® Maximum Extraction Juicer is perfect for making small or large batches of homemade juice and by forgoing the store-bought variety, I know exactly what the ingredients are (and are not).

The Maximum Extraction Juicer has a patented two-stage blade and auger system that slices and processes fruits and vegetables and a wide chute so you don’t have to waste time with lots of prep work. I used this Juicer to make freshly squeezed orange juice, pineapple juice and grapefruit juice for the mimosa variations.

Simply peel your fruits and select either the high or low pulp screen depending on your preference. (The Juicer also comes with a sauce pulp screen so you have the option of making sauces as well.) I used both screens as the variety was fun to play with. To begin juicing, make sure the pulp chute is open (pushed in position). Secure the foam screen onto the juice pitcher and place atop the drip tray. Then place the pulp container beneath the pulp chute to catch the discarded fruit. Turn the Juicer on and insert the trimmed pineapple, using the food pusher as necessary to activate the fruit with the blade. Once the Juicer has finished juicing, set aside the pineapple juice in a separate bowl and repeat with the blood oranges and grapefruit.

Once you have your juice, combine one part fruit juice of your choice with three parts champagne to a glass. Top with fresh fruits and/or herbs to serve.

Your guests will love creating their own drinks with a wide selection of juices. You can also provide different types of bubbly. Pink champagne and sparkling Moscato are good alternatives or you can use sparkling juice or cider for a non-alcoholic version.

Mimosas

Makes 1 mimosa

INGREDIENTS

1 part fruit juice
3 parts champagne, chilled
Garnishes: fresh fruits or herbs to serve

DIRECTIONS

Using your KitchenAid® Maximum Extraction Juicer, juice your fresh fruits of choice (I used blood oranges, pineapple and grapefruits). Simply peel your fruits and select either the high or low pulp screen depending on your preference. I used both screens as the variety was fun to play with.

Secure the foam screen onto the juice pitcher and place atop the drip tray. Then place the pulp container beneath the pulp chute to catch the discarded fruit. Turn the Juicer on and insert the trimmed pineapple, using the food pusher as necessary to activate the fruit with the blade. Once the Juicer has finished juicing, set aside the pineapple juice in a separate bowl and repeat with the blood oranges and grapefruit.

Fill a champagne glass a third of the way with your fruit juice of choice. Then top with chilled champagne.

Garnish with fresh fruit and/or herbs. Enjoy immediately
