Blueberry Crunch Acai Bowl

Every day should begin with a nutritious meal so I always like to start my day with something that will fuel me up for the day ahead. I usually start with fresh fruit, protein and something crunchy. Finding simple and nutritious recipes can be a challenge, but this Blueberry Crunch Acai Bowl is perfect because it’s delicious, healthy and easy to make!

Have you ever tried acai? Acai is a small fruit harvested from acai palm trees in the rainforests of South America. The small berries contain antioxidants, fiber and heart-healthy fats, and have a sweet-tart flavor similar to blackberries and raspberries. Whole acai berries are difficult to find, but you can easily find frozen acai puree at your local grocery store. It’s usually sold in 3.5-ounce packs so I add 2 packs (7 ounces) to my acai bowl. Acai is the perfect addition to a smoothie bowl because it creates a beautiful dark berry color and adds flavor and nutrients.

Both kids and adults will love this Blueberry Crunch Acai Bowl. Adults love that the bowls are easy and fresh. Kids love that they can chose their own ingredients to top them. The acai bowl is a quick, easy and healthy option for breakfast, lunch or a snack.

I used my KitchenAid® 5-Speed Diamond Blender to make this acai bowl. I love using the Diamond Blender because it results in a smooth, creamy smoothie within seconds. The Diamond Blender is also easy to use and clean so it makes prepping these bowls a snap.

To make the acai bowl, add the frozen acai, frozen blueberries, 1 large banana, almond milk and almond butter to the blender. Puree on speed 3 or 4 until smooth. Pour the acai smoothie into your bowl and garnish with your favorite toppings. I like to top mine with fresh sliced banana, blueberries, granola, coconut, hemp seeds and cocoa nibs.

Makes 1-2 servings

INGREDIENTS

7 ounces frozen acai
1 cup frozen blueberries
1 large banana, plus 1/2 cup sliced bananas for topping
1/4 cup almond milk
1 tablespoon almond butter
1/3 cup fresh blueberries
1/4 cup granola
3 tablespoons shredded coconut
1 teaspoon hemp seeds
1 teaspoon cocoa nibs

DIRECTIONS

Add frozen acai, frozen blueberries, 1 large banana, almond milk and almond butter to your KitchenAid® 5-Speed Diamond Blender.

Puree on speed 3 or 4 until well blended.

Pour smoothie into bowl and top with fresh blueberries, granola, coconut, hemp seeds and cocoa nibs. Serve immediately.
