Now that the weather has finally warmed up, I’ve been inspired to make some spring cocktails that are refreshing and perfect for a sunny day out on the patio with friends. I came up with this sparkling Blackberry Elderflower Spritzer with Mint, made with muddled mint, fresh blackberries, lime juice, Elderflower liqueur and sparkling water.
I love my new KitchenAid® Sparkling Beverage Maker because it’s so easy to use and perfect for making spritzers, cocktails and fizzy drinks at home in a snap. You simply insert the mini CO2 carbonater in the back of the maker, fill the bottle with fresh water, and use the lever to fizz up the water with carbonation. Voila! – you have sparkling water that is perfect for adding flavors and ingredients to make a myriad of cocktails (or mocktails) of your choice.
To make the Blackberry Elderflower Spritzer with Mint, simply start by muddling the ingredients together in a medium-sized glass or plastic pitcher. First add the mint leaves, lime juice, agave syrup and Elderflower liqueur (or syrup if making a mocktail). Muddle together with a wooden spoon until the leaves are smashed and soft.
Next, add the blackberries and sparkling water and mix together. Serve straight up or over ice in cocktail glasses with an additional wedge of lime for garnish. How easy is that?
This cocktail is super refreshing and light, and perfect for spring.

Blackberry Elderflower Spritzer with Mint
Makes 2-4 servings
1 liter of chilled sparkling water
1 cup mint leaves
1 lime, juiced
1/2 cup elderflower liqueur or elderflower syrup
1/4 cup agave syrup
1 pint blackberries, washed
Lime wedges, for garnish
Fill the KitchenAid® Sparkling Beverage Maker carbonating bottle with cold water to the fill line. Make sure the handle on the Sparkling Beverage Maker is in fully raised position and the bottle loading lever is pulled forward. Insert the carbonating bottle into the Sparkling Beverage Maker and carbonate the water in short pulses by pulling down the carbonation lever firmly and then allowing the lever to return to a middle rest position until you have achieved your desired carbonation level. Chill the carbonated water in the bottle in the fridge until ready to serve.
Next muddle together the fresh mint leaves, lime juice, elderflower liqueur or syrup, and agave syrup with a wooden spoon in a medium pitcher until the mint is mashed and soft.
Add the blackberries and cold sparkling water to the pitcher and mix together.
Serve in cocktail glasses straight up or over shaved ice with additional lime wedges for garnish.
