Berry, Herb, & Cheese Toasts – Two Ways

Two of the main reasons I love summer are both food-related: berries and fresh herbs. Outdoor BBQs and snacking all day on the beach over the holiday weekend are high up on that list, too. Mashing up summer’s juicy bounty with fresh herbs and cheese is an easy way to fancy up your fruit and bring out their different flavor profiles. These red, white, and blue toasts show off two flavor combinations I’m really loving right now –  a basil, blueberry and honeyed ricotta toast, and a rosemary, strawberry, brie toast– but the herb, fruit, and cheese possibilities are endless!

These toasts are impressive enough to bring to a holiday BBQ or potluck, and best of all, they come together in no time at all. The KitchenAid® Pro Line® Series 2-Slice Automatic Toaster does all the work while you prep the rest. This Pro Line® Toaster senses when you’ve dropped bread in and automatically lowers to toast. And, if you’re too busy getting the cheese or compote ready to grab the toast when it dings, it automatically lowers to keep your toast warm for three more minutes, so you can continue multitasking as you were!

My first toast pairs mild ricotta with blueberries tossed in a bit of honey. I’ve added just a few sprigs of purple ‘wild magic’ basil to add a layer that’s both sweet and a tad spicy, without overwhelming the berries.

The second toast mashes up summer’s strawberries with winter’s woody rosemary into a warm compote. A sweet strawberry compote is the perfect companion for a buttery and creamy cheese like brie.

These are just two versions of the fruit, herb, and cheese combination, but get creative and swap in your favorite cheeses or herbs!

First toast your favorite thick bread in your KitchenAid® Toaster and cut the slices diagonally into two bite-sized triangles. If you are using a baguette, you can skip the diagonal cutting step!

While the bread toasts, prep the berry and herb toppings. Toss the blueberries in 1/2 teaspoon of honey to bring out their sweetness and make their blue hue pop. To make the rosemary and strawberry compote, heat them together with sugar, water, and lemon zest to release the rosemary’s aromas into the berries, like tea.

I used my KitchenAid® Gas Convection Slide-In Range with Baking Drawer to heat my rosemary and strawberry compote.

I love this Gas Convection Slide-In Range because the small back burners allow me to lightly simmer the compote until thick, about 5 minutes, while prepping the cheese.

Mix the ricotta, mascarpone, 1 teaspoon of honey, and salt together in a small bowl until combined enough to spread on the toast. Slice the brie into 1-2″ sized rectangles, about 1/8″ thick.

Now it’s time to put it all together! Spread the ricotta mixture on top of half of the toast triangles, and lay a piece of brie on top of the other half.

For the blueberry version, place a few pieces of basil on the ricotta spread, press the blueberries into the cheese, and drizzle honey over the top. I used purple basil for the color, but common green basil will work just the same!

For the strawberry version, spoon the strawberry compote over the brie toasts. And there you have it, a festive and delicious bite for all your friends and family to enjoy.

Basil Blueberry Ricotta Toast

Makes 12 servings

INGREDIENTS

1/2 cup blueberries
1 tablespoon honey, divided
1/4 cup + 2 teaspoons fresh ricotta cheese
2 tablespoons mascarpone
1/8 teaspoon salt
6 slices of thick bread, toasted and cut diagonally in half
10 large basil leaves ripped into pieces or 36 small leaves

DIRECTIONS

Toast your bread slices in your KitchenAid® Pro Line® Series 2-Slice Automatic Toaster. Toss the blueberries in 1/2 teaspoon of honey and set aside.

Prepare the cheese spread by mixing the ricotta cheese, mascarpone, 1 teaspoon of honey, and salt in a small bowl until well combined.

Spread the cheese over the toast triangles.

Place 3 small basil leaves or pieces on top of the cheese and top with blueberries. Drizzle the remaining honey over the top of the toasts and serve.

Rosemary Strawberry Brie Toast

Makes 12 servings

INGREDIENTS

1 1/2 cups strawberries, hulled and cut in half or thirds
3 tablespoons water
2 tablespoons sugar
1 teaspoon minced rosemary from 1-2 sprigs
Zest of half a lemon
6 slices of thick bread, toasted and cut diagonally in half
4 ounces triple cream brie, sliced into 1-2″ long pieces, about 1/8″ thick

DIRECTIONS

Toast your bread slices in your KitchenAid® Pro Line® Series 2-Slice Automatic Toaster.

Add the strawberries, water, sugar, minced rosemary, and lemon zest to a small saucepan over medium heat on the cooktop of your KitchenAid® Gas Convection Slide-In Range with Baking Drawer. Cook until the sugar dissolves, about 1-2 minutes, then reduce the heat to medium low and simmer until the strawberries break down and the compote thickens, about 5 minutes. Remove from heat and set aside.

Place one piece of brie on each toast triangle, spoon strawberry compote over the top, and serve.
