In my opinion there are few things in life that are better than cheese. So needless to say I’m super excited to share this ooey gooey baked brie recipe with you. Since peaches are in season, I’ve added a peach topping that is a little bit spicy and a little bit sweet, the perfect complement to the buttery brie.

This baked brie “cake” is as delicious as it is beautiful, and the best part is, it’s super simple to make. It will take you all of about 15 minutes to make. I think it’s the perfect seasonal entertaining idea, and I hope it helps you savor these last few weeks of summer.

To start, mix together the peaches, lime juice, honey, chili powder, and parsley in a bowl.

Preheat the KitchenAid® 12″ Convection Digital Countertop Oven to 350 degrees F.

Place the brie on a baking sheet, and bake for 12-15 minutes or until the cheese starts to melt. You can bake the brie by itself or with the topping.

Carefully place the brie onto a small cake stand.

Add the topping if you didn’t in the previous step.

Now if this recipe doesn’t scream “end of the summer party,” I don’t know what does. I suggest enjoying this with a nice glass of white wine that complements the peach flavor.

Makes 1 9-inch “cake”

INGREDIENTS

1 wheel of brie cheese
1 peach, sliced
1 tablespoon chopped parsley
1 teaspoon fresh lime juice
1/2 teaspoon chili powder
1 tablespoons honey

DIRECTIONS

Mix together the peaches, lime juice, honey, chili powder, and parsley in a bowl.
