Pear and Hazelnut Salted Caramel Pie with Chocolate Graham Crust

Fall has finally arrived – my favorite season of the year! I love the cooler weather and dressing in jeans, sweaters, boots and leather jackets. I love the beautiful colors of the changing leaves. And I love the gorgeous fall produce and warmer, cozier comfort foods.

One of my favorite things to make in the fall is pie – sweet or savory with gorgeous fruits and veggies and all sorts of lovely ingredients and spices. There’s something so soothing about the smell of pie baking in the oven that warms up the home and goes perfectly with the crisp fall air and cooler days and nights.

I recently got a KitchenAid® Stainless Steel 8-Piece Set of cookware along with a new KitchenAid® 9” Professional-Grade Nonstick Pie Pan and was inspired to make a gorgeous Pear and Hazelnut Salted Caramel Pie with a Chocolate Graham Crust. The flavors of nuts, homemade caramel, fresh pears, cinnamon and nutmeg pair perfectly together and scream fall.

First, I made the Chocolate Graham Crust by blitzing some graham crackers with sugar and cocoa powder in my KitchenAid® 14-Cup Food Processor for a few minutes.

Then, I melted a stick of butter in my 1.5-Quart Saucepan.

I added the melted butter to the crushed graham crackers and cocoa mixture until it was all blended together.

Then, I poured the graham crust mixture into the 9” Pie Pan, patted it down evenly and baked it in a 375 degree oven for 5 minutes. Let it cool on a wire rack.

Next I made my caramel sauce in my 3-Quart Saucepan by cooking the sugar and water together until it dissolved.

Then I added the butter, brought it to a slow boil and continued to cook it at a low boil until the mixture turned a deep caramel brown color. (Note: this can take a while so be patient and don’t turn the heat up too high or you’ll risk burning the caramel sauce and will need to start over!)

Once the caramel mixture turned golden brown, I removed it from the heat and added the heavy cream immediately.

Then I whisked the final mixture together, added sea salt at the end and let it cool while I prepared my pear hazelnut pie filling.

To make the filling, first I peeled, cored and cut the pears into thin slices and crushed the hazelnuts in a large plastic bag. Then I added the spices, flour, sugar and lemon juice to the pears.

I tossed them all together gently with my hands in a large mixing bowl and started building the pie in layers.

Start by layering 1/2 of the pears on the bottom of the pre-baked chocolate graham crust in a circular pattern working in to the center, and add 1/2 of the crushed hazelnuts on top.

Pour 1/2 of the caramel sauce over the pears. Repeat the layering of pears, hazelnuts and caramel again until the piecrust is filled to the top.

Place the Pie Pan on a baking sheet in the oven and bake for about 20 minutes. Reduce the heat to 325-350 and bake for another 10 minutes or so until the pears are done and the caramel sauce is bubbly.

Cool the pie on a wire rack completely and slice into wedges. Serve with a side of vanilla ice cream or whipped cream if desired.

INGREDIENTS

For chocolate graham crust

1 package graham crackers
1/4 cup cocoa powder
1/4 cup sugar
6 tablespoons unsalted butter

For salted caramel sauce

1 cup sugar
1/4 cup water
1 stick unsalted butter
1/2 cup heavy cream
1 1/2 teaspoons sea salt

For pear hazelnut filling

6 medium pears, peeled, cored and sliced thin
1/2 cup hazelnuts
1/3 cup sugar
2 tablespoons flour
1/4 teaspoon cinnamon
1/8 teaspoon nutmeg
Juice from 1 lemon

DIRECTIONS

For chocolate graham crust

Preheat oven to 375 degrees F.

Place graham crackers, sugar and cocoa powder in a KitchenAid® 14-Cup Food Processor and process on high for a few minutes until you have fine crumbs.

Melt the butter in a KitchenAid 1.5-Quart Stainless Steel Saucepan and add it to the crushed graham crackers and cocoa mixture in the Food Processor and blitz until all ingredients are mixed together well and evenly.

Pour the graham crust mixture into your KitchenAid® 9” Pie Pan, pat it down evenly and bake it for 5 minutes. Let it cool on a wire rack while you make the salted caramel sauce.

For salted caramel sauce

Next make the caramel sauce in a 3-Quart Stainless Steel Saucepan by cooking the sugar and water together until dissolved.

Add the butter, bring it to a slow boil and continue to cook at a low boil until the mixture turns a deep caramel brown color. (Note: this can take a while so be patient and don’t turn the heat up too high or you’ll risk burning the caramel sauce and will need to start over!)

Once the caramel mixture has turned a deep golden brown, remove it from the heat and add the heavy cream immediately. Whisk the final mixture together and add sea salt at the end. Let cool while preparing the pear hazelnut pie filling.

For pear hazelnut filling

Crush the hazelnuts in a large plastic bag until the nuts are broken into large pieces.

Add the spices, flour, sugar and lemon juice to the pears and toss them all together gently with your hands in a large mixing bowl. Then start building the pie in layers.

Start by layering 1/2 of the pears on the bottom of the pre-baked chocolate graham crust in a circular pattern working in to the center, and add 1/2 of the crushed hazelnuts on top.

Pour 1/2 of the caramel sauce over the pears. Repeat the layering of pears, hazelnuts and caramel again until the pie crust is filled to the top.
