Today is National Clean Out Your Refrigerator Day! Who doesn’t need a reminder to clean out that food abyss? To help make your job a little easier, I have a recipe for you that can be adapted to use whatever you have lingering in your refrigerator.

This chili is one part spicy and one part smoky, and the Cheesy Jalapeño Cornbread is the perfect sweet compliment. It can also be made vegetarian or with meat.

I got so much satisfaction out of making this recipe and cleaning out almost everything in my KitchenAid® Multi-Door Freestanding Refrigerator. And let me tell you, my Refrigerator holds a lot, so I had a lot of ingredients to use up.

Typically this day is all about throwing out expired or moldy groceries, but my refrigerator is equipped with the Preserva® Food Care System that helps keep food fresh longer! And all the fruits and veggies I store in the produce drawer stay super fresh thanks to the Produce Preserver that helps delay over-ripening. So instead of throwing away the contents of my refrigerator, I get to use them up in this recipe! It was magical.

To make the chili, start by sautéing the vegetables and meat in a KitchenAid® Professional Cast Iron 6-Quart Casserole until the vegetables are just soft and the meat is just brown. Drain the meat and veggies. Like I said, this recipe can be adapted to use whatever vegetables and meat you have. A white onion is a great start. You can have some fun from there.

Great veggies for chili include: carrots, green peppers, red peppers, pumpkin, sweet potatoes, celery, kale, and more. Meats that can be used are ground turkey, ground beef, short ribs, and pork.

Next, add the meat and vegetables to a KitchenAid® Multi-Cooker along with the rest of the chili ingredients. (You can also use the Multi-Cooker and accompanying Stir Tower to sauté the meat and vegetables, but I’m partial to my KitchenAid® Cooktop.) Cook using the slow cooker setting on low for 6 to 8 hours.

While the chili is cooking, start the cornbread. Follow the cornbread mix instructions. Add the cheese and jalapeño and mix. Pour into a greased KitchenAid® Round Cake Pan.

Bake the cornbread in the KitchenAid® Wall Oven at 350° F for 15 to 20 minutes or until done in the middle. Drizzle the cornbread with honey.

If you are using soft vegetables like spinach or kale, add these to the chili about one hour before it’s done. Serve the chili with a slice of cornbread and shredded cheese on top.

Makes 6 servings

INGREDIENTS

For the chili

1 pound ground beef
1 white onion, chopped
3 carrots, chopped
1 green pepper
1 red pepper
3 large mushrooms, chopped
1 clove garlic, minced
1 fifteen ounce can pinto beans, drained and rinsed
1 fifteen ounce can kidney beans, drained and rinsed
1 six ounce can tomato paste
1 fifteen ounce can chicken broth
1 fifteen ounce can fire roasted diced tomatoes
1 chipotle pepper in adobo sauce, minced
1 tablespoon adobo sauce
1 tablespoon chili powder
1 teaspoon cumin
1 teaspoon smoked paprika
2 cups kale, chopped
Salt and pepper to taste

For the cheesy jalapeño cornbread

Cornbread mix and additional ingredients needed
1/2 cup smoked gouda, shredded
1 minced jalapeño, ribs and seeds removed

DIRECTIONS

To make the chili, start by sautéing the vegetables and meat in a KitchenAid® Professional Cast Iron 6-Quart Casserole until the vegetables are just soft and the meat is just brown. Drain the meat and veggies.

Next, add the meat and vegetables to a KitchenAid® Multi-Cooker along with the rest of the chili ingredients. Cook using the slow cooker setting on low for 6 to 8 hours.
