The holidays have come and gone, and many of us are left feeling like maybe we’ve overindulged a bit. With the start of a brand new year, it’s nice to hit the reset button, and look at this as a good time to begin healthier eating habits.

So I’ve created this Apple Pie Smoothie Bowl, using spiralized apple “noodles,” along with a few other hearty and healthy toppings, to help you start your day feeling full, happy, and ready to take on whatever the new year may bring.

I like to use my KitchenAid® Spiralizer Plus with Peel, Core and Slice attached to the power hub of my KitchenAid® Stand Mixer to prep the apple for the base smoothie layer of this breakfast bowl. It’s perfect for fresh fruit and vegetable recipes, from zucchini noodles to sweet and savory dishes. It makes quick work of this Granny Smith apple, coring it and slicing it into neat rounds, to help give the KitchenAid® Torrent™ Magnetic Drive Blender a good head start.

Slide the cored and sliced apple off the Spiralizer Plus attachment. You’re now ready to make your smoothie.

A little water helps blend all the apple pie ingredients into the perfect smoothie consistency. My KitchenAid® Side-by-Side Refrigerator makes it really simple for me to grab cold, filtered water whenever I need it!

To the water, add a little maple syrup for sweetness, oats for added fiber, Greek yogurt for protein and a creamy texture, the cored and sliced apple, and a dash of cinnamon, for that authentic “apple pie” flavor.

Next, get going on the toppings. I love how a big tangle of sweet and cinnamon-y apple noodles takes this breakfast from good to great. For the noodles, I switch to the medium spiralizing blade. The Spiralizer Plus gives so many great options! And it’s so simple to slide one blade off and switch it for another.

Place the apple noodles in a KitchenAid® Stainless Steel Skillet, along with some coconut oil, maple syrup, and a dash of cinnamon.

Cook the apples on the KitchenAid® Gas Convection Slide-In Range, over low heat, just until juicy and slightly tender.

Now pour the smoothie mixture into a shallow bowl, and add your toppings! Sweet spiced spiralized apples, tender walnuts, chewy goji berries, and crunchy chia seeds make this breakfast as healthy and satisfying as it is delicious!

Apple Pie Smoothie Bowl

Makes 1-2 servings

INGREDIENTS

For the smoothie

1 apple
1/4 cup Greek yogurt
2 tablespoons water
1 1/2 tablespoons oats
1 tablespoon pure maple syrup
1/2 teaspoon ground cinnamon

For the toppings

1 tablespoon coconut oil
1 apple
1 tablespoon pure maple syrup
1/2 teaspoon ground cinnamon
1/3 cup toasted walnuts
1/3 cup goji berries
1 tablespoon chia seeds

DIRECTIONS

Attach the KitchenAid® Spiralizer Plus with Peel, Core and Slice to the power hub of the KitchenAid® Stand Mixer. Spiralize the apple with your desired blade size.

Place the apple, Greek yogurt, water, oats, pure maple syrup, and ground cinnamon in the KitchenAid® Torrent™ Magnetic Drive Blender. Set to the smoothie program and press “start.”

Heat the KitchenAid® Stainless Steel Skillet on the KitchenAid® Gas Convection Slide-In Range on low heat. Attach the KitchenAid® Spiralizer Plus with Peel, Core and Slice to the power hub of the KitchenAid® Stand Mixer. Spiralize the apple with your desired blade size.

Add the coconut oil, spiralized apple, maple syrup, and cinnamon to the pan, and sauté, stirring, until the apple is al dente.

Pour the smoothie into a shallow bowl. Top with sautéed apple noodles, walnuts, goji berries, and chia seeds. Serve immediately.
